Historically its sustainable dry-land production made Arizona&#8217;s Gila River Valley and California&#8217;s Central Valley the breadbaskets of the West until it was supplanted by &#8220;Green Revolution&#8221; hybrids. It has a sweet flavor especially good for baking.
